- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 2 tablespoons heavy cream (optional, for a creamier sauce)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloin dry with paper towels and season generously with salt and pepper on all sides.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork for 3-4 minutes on each side until browned. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add chopped onion. Sauté for about 5 minutes until translucent, then add minced garlic and cook for an additional 1-2 minutes.
- Pour in chicken broth, scraping the bottom of the skillet to release flavorful bits.
- Stir in Dijon mustard, whole grain mustard, thyme, honey, and balsamic vinegar. Let simmer for 3-4 minutes.
- If desired, add heavy cream and let the sauce simmer for another 2-3 minutes until slightly thickened.
- Place the seared pork back into the skillet, spooning some sauce over the top.
- Transfer the skillet to the oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork rest for 5-10 minutes, covered loosely with aluminum foil.
- Slice the pork into 1-inch thick medallions.
- Arrange sliced pork on a serving platter and drizzle with Dijon sauce, including onions and herbs.
- Garnish with fresh thyme leaves or cracked black pepper if desired.
- Serve with your favorite sides, such as roasted vegetables or creamy mashed potatoes.
