  • Author: Lily
  • Total Time: 45 minutes
  • Yield: 4-6 servings 1x

Description

Creamy mashed potatoes enriched with garlic and Parmesan cheese, offering a fluffy texture and customizable flavors. Perfect as a side dish for any meal, these potatoes are easy to prepare and can be enhanced with fresh herbs or spices.

Ingredients

Scale
  • 2 pounds of potatoes (Yukon Gold or Russet)
  • 4 tablespoons of unsalted butter
  • 1/4 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon of fresh chives, chopped (optional)
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika (optional)

Instructions

  1. Start by selecting your potatoes. Wash them thoroughly under cold water to remove any dirt.
  2. Peel the potatoes using a vegetable peeler. Cut the potatoes into evenly sized chunks, about 1 to 2 inches.
  3. If you have time, soak the chopped potatoes in cold water for about 30 minutes.
  4. Place the chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let them simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  5. Once the potatoes are cooked, carefully drain them in a colander. Allow them to sit for a few minutes to let the steam escape.
  6. In a small saucepan, melt the butter over low heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.
  7. Pour in the heavy cream and stir to combine. Let it warm up for a minute, then remove it from the heat.
  8. Stir in the grated Parmesan cheese into the butter and cream mixture. Mix until the cheese is melted and the mixture is smooth.
  9. Return the drained potatoes to the pot. Using a potato masher or a fork, begin mashing the potatoes until they reach your desired consistency.
  10. Gradually pour the creamy butter and cheese mixture into the mashed potatoes. Stir well to combine, ensuring that all the potatoes are coated in the creamy goodness.
  11. If you’re using chives, fold them into the mashed potatoes. If you like a bit of spice, sprinkle some paprika on top.
  12. Transfer the creamy mashed potatoes to a serving bowl. You can drizzle a little olive oil on top for added richness and garnish with extra chives or a sprinkle of cheese if you like.

Notes

  • For a richer flavor, consider adding roasted garlic instead of fresh garlic.
  • You can substitute the Parmesan cheese with other cheeses like cheddar or Gruyère for a different taste.
  • Feel free to adjust the seasoning according to your preference.
