- 2 pounds of potatoes (Yukon Gold or Russet)
- 4 tablespoons of unsalted butter
- 1/4 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced

- 1 tablespoon of fresh chives, chopped (optional)
- 1 tablespoon of olive oil
- 1 teaspoon of paprika (optional)
Instructions
- Start by selecting your potatoes. Wash them thoroughly under cold water to remove any dirt.
- Peel the potatoes using a vegetable peeler. Cut the potatoes into evenly sized chunks, about 1 to 2 inches.
- If you have time, soak the chopped potatoes in cold water for about 30 minutes.
- Place the chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let them simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Once the potatoes are cooked, carefully drain them in a colander. Allow them to sit for a few minutes to let the steam escape.
- In a small saucepan, melt the butter over low heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Pour in the heavy cream and stir to combine. Let it warm up for a minute, then remove it from the heat.
- Stir in the grated Parmesan cheese into the butter and cream mixture. Mix until the cheese is melted and the mixture is smooth.
- Return the drained potatoes to the pot. Using a potato masher or a fork, begin mashing the potatoes until they reach your desired consistency.
- Gradually pour the creamy butter and cheese mixture into the mashed potatoes. Stir well to combine, ensuring that all the potatoes are coated in the creamy goodness.
- If you’re using chives, fold them into the mashed potatoes. If you like a bit of spice, sprinkle some paprika on top.
- Transfer the creamy mashed potatoes to a serving bowl. You can drizzle a little olive oil on top for added richness and garnish with extra chives or a sprinkle of cheese if you like.
