Instructions

  1. In a large mixing bowl, combine the warm water, active dry yeast, and granulated sugar. Stir gently to combine and let it sit for about 5 minutes until it becomes frothy.
  2. Add the all-purpose flour and salt to the bowl. Mix until a dough begins to form.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the kneaded dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the risen dough and turn it out onto a floured surface. Divide it into 10 equal pieces.
  6. Roll each piece into a long rope, about 12-14 inches long.
  7. Wrap the dough rope around a hot dog, covering it completely. Repeat for all hot dogs.
  8. In a large pot, bring 10 cups of water to a boil and carefully add the baking soda.
  9. Reduce heat to a simmer and gently lower each wrapped pretzel dog into the water, boiling for about 30 seconds on each side.
  10. Remove the pretzel dogs with a slotted spoon and place them on a parchment-lined baking sheet.
