Quick and Delicious French Toast Muffin Recipe

This Quick and Delicious French Toast Muffin Recipe turns simple pantry staples into golden, cinnamon-scented muffin cups that taste just like classic French toast—but in bite-sized, grab-and-go form! Perfect for breakfast meal prepping, potlucks, brunch carry-ins, or cozy mornings at home. Fluffy inside, crisp on top, and always a crowd-pleaser.

  • Total Time: 35 minutes
  • Yield: 12 muffins 1x

Ingredients

Scale
  • 6 cups cubed day-old bread (brioche, challah, French bread, or sandwich bread)

  • 4 large eggs

  • 1¼ cups milk (any kind: dairy or non-dairy)

  • ¼ cup pure maple syrup or brown sugar

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • ¼ tsp salt

  • 2 tbsp unsalted butter, melted

  • Optional: extra cinnamon sugar for topping

Topping ideas:

  • Powdered sugar

  • Maple syrup

  • Fresh berries or bananas

  • Crushed nuts or granola

Instructions

  • Prep Oven and Muffin Tin
Preheat oven to 350°F. Grease a 12-cup muffin tin with butter or spray.

  • Make the Custard Mixture
In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, salt, and melted butter.

  • Add the Bread
Add bread cubes to the bowl and gently toss until fully soaked. Let sit 5–10 minutes to absorb.

  • Fill Muffin Cups
Spoon mixture evenly into muffin cups, pressing down slightly. Sprinkle with cinnamon sugar if desired.

  • Bake
Bake for 25–30 minutes, until muffins are puffed and golden. Let cool in pan 5 minutes, then transfer to a rack.

  • Serve Warm or Cool
Serve with your favorite toppings or enjoy as-is for a quick breakfast bite!

Notes

  • Use stale bread for the best texture—it holds the custard better!

  • Make ahead: Assemble the night before and bake fresh in the morning.

  • Freeze friendly: Wrap and freeze; reheat in the microwave or toaster oven.

  • Dairy-free? Use almond, oat, or soy milk and vegan butter.

  • Add-ins like mini chocolate chips, diced apples, or pecans make it extra special!
