Indulge in these delightful Red Velvet Cookie Bars topped with creamy frosting and white chocolate chips. Perfect for any occasion, these bars combine the classic flavors of red velvet with a chewy cookie texture, making them a sweet treat everyone will love.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chips
  • 1 cup cream cheese frosting (store-bought or homemade)
  • Optional: additional white chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal later.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract and red food coloring, scraping down the sides of the bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Fold in the white chocolate chips using a spatula or wooden spoon.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the pan cool for 10-15 minutes before transferring the cookie bars to a wire rack to cool completely.
  10. Once cooled, frost the cookie bars with cream cheese frosting and sprinkle additional white chocolate chips on top if desired.
  11. Cut into squares or rectangles and serve.

Notes

  • For a richer chocolate flavor, you can increase the cocoa powder to 2 tablespoons.
  • Feel free to adjust the amount of red food coloring to achieve your desired shade of red.
  • If you prefer a different type of frosting, cream cheese frosting can be substituted with vanilla buttercream or whipped cream.
