  • 2 tablespoons water
  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, salt, black pepper, oregano, and thyme. Mix until well combined, being careful not to overmix.
  2. Shape the mixture into meatballs about 1 to 1.5 inches in diameter, yielding around 20-24 meatballs.
  3. Place the meatballs on a baking sheet lined with parchment paper.
  4. Preheat your oven to 400°F (200°C).
  5. Bake the meatballs for 20-25 minutes, or until cooked through and golden brown. Check for doneness by cutting one in half.
  6. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion for 5-7 minutes until soft and translucent.
  7. Add beef broth, Worcestershire sauce, and soy sauce to the skillet. Stir and bring to a gentle simmer.
  8. In a small bowl, mix cornstarch with water until smooth. Gradually add to the simmering gravy, stirring constantly. Simmer for another 5 minutes until thickened. Season with salt and pepper.
  9. Transfer the baked meatballs to the skillet with the gravy and let them simmer together for a few minutes.
  10. Boil a large pot of salted water. Add cubed potatoes and cook for 15-20 minutes until fork-tender.
  11. Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Adjust seasoning as needed. Garnish with chives or parsley if desired.
