  • 1 cup thick plain Greek yogurt (or full-fat sour cream)
  • 3 cloves garlic, finely minced (for sauce)
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped (for sauce)
  • 2 tbsp fresh lemon juice
  • 12 tbsp olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or foil. If using a wire rack, place it on top of the lined baking sheet.
  3. In a large mixing bowl, gently combine all meatloaf ingredients: ground beef, breadcrumbs, egg, onion, garlic, feta cheese, sun-dried tomatoes, Kalamata olives, spinach, oregano, and parsley.
  4. Mix gently to avoid overworking the meat.
  5. Shape the mixture into a compact loaf, about 9×5 inches, on the prepared baking sheet.
  6. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
