Ingredients
- Medium or large shrimp, peeled and deveined
- Fresh lobster meat
- Cheddar Bay biscuit mix
- Peas
- Carrots
- Corn
- Onions, chopped
- Butter (2 tablespoons)
- Flour (2 tablespoons)
- Seafood or chicken broth (2 cups)
- Heavy cream (1 cup)
- Salt
- Pepper
- Garlic powder
- Cayenne pepper
- Fresh herbs (parsley or thyme)
- Milk or water (for biscuit mix)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add chopped onions, carrots, and any other vegetables you’re using. Sauté for about 5-7 minutes until they are tender.
- Stir in the shrimp and lobster meat, cooking for another 3-4 minutes until the shrimp turn pink and opaque.
- Sprinkle 2 tablespoons of flour over the seafood and veggies, stirring to coat. Gradually add 2 cups of seafood or chicken broth and 1 cup of heavy cream. Stir continuously until the mixture thickens, about 5 minutes.
- Season the filling with salt, pepper, garlic powder, and a pinch of cayenne for a little kick. You can also add fresh herbs like parsley or thyme for added flavor.
- Pour the seafood mixture into a 9-inch pie dish or a similar-sized baking dish, spreading it out evenly.
- In a separate bowl, prepare the Cheddar Bay biscuit mix according to the package instructions. If using a homemade mix, combine flour, baking powder, garlic powder, shredded cheddar cheese, and butter until crumbly, then add milk or water until just combined.
- Scoop large spoonfuls of the biscuit dough over the seafood filling.
- Place the pot pie in the preheated oven and bake for 20-25 minutes or until the biscuits are golden brown and the filling is bubbly.
- Once done, remove the pot pie from the oven and let it cool for a few minutes before serving.
