- 1 pound large shrimp, peeled and deveined
- 2 cups cooked jasmine rice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1 lime, juiced
- 1 avocado, diced
- Fresh cilantro, for garnish
- 1 cup fresh pineapple, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a medium bowl, combine the diced pineapple, chopped red onion, and minced jalapeño.
- Add the chopped cilantro and lime juice to the bowl. Mix gently to combine.
- Season with a pinch of salt to taste. Mix everything together gently.
- Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 15-20 minutes.
- In a large bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, paprika, cumin, salt, and pepper.
- Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer.
- Cook the shrimp for about 2-3 minutes on one side until they turn pink and opaque. Flip and cook for an additional 1-2 minutes.
- Remove the shrimp from the skillet and squeeze fresh lime juice over them.
- Rinse 1 cup of jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice with 1 1/2 cups of water and a pinch of salt. Bring to a boil.
- Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes.
- After 15 minutes, remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork before serving.
- Place a generous scoop of fluffy jasmine rice in the bottom of each serving bowl.
- Arrange the cooked shrimp on top of the rice.
- Top with diced avocado and a generous spoonful of pineapple salsa.
- Garnish with fresh cilantro and serve immediately.
