  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 lime, juiced
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • 1 cup fresh pineapple, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a medium bowl, combine the diced pineapple, chopped red onion, and minced jalapeño.
  2. Add the chopped cilantro and lime juice to the bowl. Mix gently to combine.
  3. Season with a pinch of salt to taste. Mix everything together gently.
  4. Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 15-20 minutes.
  5. In a large bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, paprika, cumin, salt, and pepper.
  6. Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer.
  7. Cook the shrimp for about 2-3 minutes on one side until they turn pink and opaque. Flip and cook for an additional 1-2 minutes.
  8. Remove the shrimp from the skillet and squeeze fresh lime juice over them.
  9. Rinse 1 cup of jasmine rice under cold water until the water runs clear.
  10. In a medium saucepan, combine the rinsed rice with 1 1/2 cups of water and a pinch of salt. Bring to a boil.
  11. Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes.
  12. After 15 minutes, remove from heat and let it sit, covered, for an additional 5 minutes.
  13. Fluff the rice with a fork before serving.
  14. Place a generous scoop of fluffy jasmine rice in the bottom of each serving bowl.
  15. Arrange the cooked shrimp on top of the rice.
  16. Top with diced avocado and a generous spoonful of pineapple salsa.
  17. Garnish with fresh cilantro and serve immediately.
