- 2 Apples (Peeled, Cored, and Grated)
- 2 Carrots (Peeled and Finely Grated or Pureed)
- 1 cup Oat Flour
- 1 Large Egg
- 1/4 cup Melted Coconut Oil
- 1/4 cup Water or Low-Sodium Beef Broth
- Optional: A Pinch of Ground Cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone baking mat.
- In a medium-sized mixing bowl, combine the finely grated apple and finely grated (or pureed) carrot. Add the large egg, melted and slightly cooled coconut oil, and a quarter cup of water or low-sodium beef broth. Stir until well combined.
- In a separate, larger mixing bowl, place your oat flour. If using the optional pinch of ground cinnamon, add it now and whisk briefly.
- Gradually add the wet ingredient mixture to the dry ingredients, mixing until a soft, pliable dough forms. Adjust with more water or broth if too dry, or more oat flour if too sticky.
- For rolled & cut bites, lightly flour a clean work surface, roll out the dough to a thickness of about ¼ to ½ inch, and cut into shapes. For rustic drop bites, use a teaspoon to drop rounded spoonfuls onto the baking sheet.
- Arrange the formed treats on the baking sheet, leaving space between each one.
- Bake for approximately 15-20 minutes until lightly golden around the edges and firm to the touch but still soft in the center.
- Remove from the oven and transfer the treats to a wire rack to cool completely.
