  • 2 large eggs

  • 2 cups fresh peaches, peeled and diced (or 1 can of peaches, drained and chopped)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk to the butter mixture, starting with a third of the dry mixture, followed by half of the buttermilk. Mix until just combined, repeating until all ingredients are incorporated.
  6. Gently fold in the diced peaches and chopped nuts (if using) with a spatula.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. In a small bowl, mix together the brown sugar and cinnamon for the topping, then sprinkle it evenly over the batter.
  9. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the pan for about 10 minutes before turning out onto a wire rack to cool completely.
