  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 3 cloves garlic (minced)
  • 1 medium onion (finely chopped)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves (chopped, plus extra for garnish)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup pasta water (reserved from cooking spaghetti)

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
  2. Add the spaghetti to the boiling water and cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  3. Before draining, reserve about 1/4 cup of the pasta water.
  4. Drain the spaghetti in a colander and set aside without rinsing.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  6. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  7. Add the chopped sun-dried tomatoes and cook for 2-3 minutes.
  8. Reduce heat to low, pour in the heavy cream, and let it simmer for about 5 minutes to thicken.
  9. Stir in the grated Parmesan cheese until melted. Season with salt, pepper, and red pepper flakes (if using).
  10. Add the chopped basil and simmer for another minute.
  11. Add the drained spaghetti to the skillet and toss to coat with the sauce.
  12. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  13. Taste and adjust seasoning as needed.
  14. Twirl the spaghetti onto plates or into bowls for presentation.
  15. Top with extra grated Parmesan and fresh basil leaves.
  16. Serve immediately, ideally with a side salad or crusty bread.
