- 12 ounces spaghetti
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 3 cloves garlic (minced)
- 1 medium onion (finely chopped)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves (chopped, plus extra for garnish)
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup pasta water (reserved from cooking spaghetti)
Instructions
- Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
- Add the spaghetti to the boiling water and cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
- Before draining, reserve about 1/4 cup of the pasta water.
- Drain the spaghetti in a colander and set aside without rinsing.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
- Add the chopped sun-dried tomatoes and cook for 2-3 minutes.
- Reduce heat to low, pour in the heavy cream, and let it simmer for about 5 minutes to thicken.
- Stir in the grated Parmesan cheese until melted. Season with salt, pepper, and red pepper flakes (if using).
- Add the chopped basil and simmer for another minute.
- Add the drained spaghetti to the skillet and toss to coat with the sauce.
- If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
- Taste and adjust seasoning as needed.
- Twirl the spaghetti onto plates or into bowls for presentation.
- Top with extra grated Parmesan and fresh basil leaves.
- Serve immediately, ideally with a side salad or crusty bread.
