Ingredients
Scale
- 1 pound flank steak or sirloin, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper (any color), thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup cooked rice (optional)
- 1 cup black beans, drained and rinsed (optional)
- Fresh cilantro, chopped (for garnish)
- Sour cream (for serving)
- Hot sauce (for serving)
Instructions
- In a large bowl, combine the sliced steak with olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Toss until the steak is well coated. Let it marinate for about 15-20 minutes.
- While the steak is marinating, slice the onion and bell pepper.
- Heat a large skillet over medium-high heat. Add the marinated steak and cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.
- Remove the steak from the skillet and set aside. In the same skillet, add the sliced onion and bell pepper. Sauté for about 5-7 minutes until softened and slightly caramelized.
- Return the steak to the skillet and mix everything together. Cook for an additional 2 minutes to combine flavors. Adjust seasoning if necessary.
- Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side.
- Lay a tortilla flat and add a scoop of the steak and vegetable mixture in the center. If using, add a layer of rice and black beans.
- Sprinkle a generous amount of shredded cheddar and Monterey Jack cheese over the filling.
- Fold the sides of the tortilla over the filling, then roll it up from the bottom, tucking tightly. Repeat for the remaining tortillas.
- In the same skillet, add a little more olive oil and heat over medium heat.
- Place the burritos seam-side down in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy.
- Carefully flip the burritos and cook for another 3-4 minutes on the other side until crispy and the cheese is melted.
- Remove the burritos from the skillet and let them rest for a minute before serving.
Notes
- Feel free to customize the fillings with your favorite ingredients, such as avocado, corn, or different types of cheese.
