Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal later.
  2. In a medium saucepan, melt the butter over low heat. Once melted, remove it from the heat and stir in the sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula. Set aside while you prepare the cheesecake layer.
  6. In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. This should take about 2-3 minutes.
  7. Add the granulated sugar and continue to beat until well combined and fluffy.
  8. Mix in the egg and vanilla extract, beating until everything is well incorporated. Make sure to scrape down the sides of the bowl to ensure even mixing.
  9. Gently fold in the sliced strawberries, being careful not to break them up too much. You want to keep some nice chunks for texture and flavor.
  10. Carefully spoon the cheesecake mixture over the brownie layer in the baking pan. Use a spatula to spread it evenly, covering the brownie layer completely.
  11. Using a knife or a toothpick, swirl the cheesecake layer into the brownie layer for a marbled effect. Don’t overdo it; you want to see some distinct layers.
  12. Place the pan in the preheated oven and bake for 30-35 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  13. Once baked, remove the brownies from the oven and let them cool in the pan on a wire rack for about 15-20 minutes. Then, transfer them to the refrigerator to chill for at least 2 hours. This will help the cheesecake layer set properly.
  14. Once the brownies are completely chilled, remove them from the pan using the parchment paper (if you used it) and place them on a cutting board.
  15. Using a sharp knife, cut the brownies into squares. Wipe the knife with a damp cloth between cuts to ensure clean edges.
  16. For an extra touch, you can garnish each brownie square with a fresh strawberry slice or a dollop of whipped cream before serving.
  17. Enjoy your delicious strawberry cheesecake brownies with a glass of milk or your favorite beverage!
