  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for dusting)
  • 1 teaspoon ground cinnamon (for dusting)
  • Vegetable oil (for frying)

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, lemon juice, and salt. Beat until smooth and creamy, about 2-3 minutes. Gently fold in the sliced strawberries, being careful not to mash them. Set aside.
  2. Lay the tortillas flat on a clean surface. If stiff, warm them in the microwave for 10-15 seconds. Spoon 2-3 tablespoons of the filling onto the center of each tortilla. Fold the sides over the filling and roll from the bottom to the top, sealing the edges with a bit of water if necessary.
  3. In a large skillet, heat enough vegetable oil to cover the bottom by about 1 inch over medium heat until it reaches 350°F (175°C). Test with a small piece of tortilla; if it sizzles, the oil is ready. Fry 2-3 chimichangas at a time for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
  4. Mix powdered sugar and ground cinnamon in a small bowl. While warm, dust the chimichangas generously with the cinnamon-sugar mixture. Serve warm, optionally with whipped cream, vanilla ice cream, or fresh strawberries.
