  • 8 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup freeze-dried strawberry powder
  • 1/2 cup white chocolate chips (optional)
  • For the Glaze (optional):
  • 1 cup powdered sugar
  • 12 tsp milk
  • 1/2 tsp vanilla extract
  • 12 tsp freeze-dried strawberry powder

Instructions

  1. Preheat your oven to 375°F (190°C). Line a couple of baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, using an electric mixer, beat together the softened unsalted butter and softened full-fat cream cheese on medium speed until smooth, about 1-2 minutes.
  3. Add the granulated sugar to the butter and cream cheese mixture. Beat on medium-high speed for another 2-3 minutes until light and fluffy.
  4. Beat in the large egg until just combined, then add the vanilla extract and mix until fully incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and freeze-dried strawberry powder.
  6. Gradually add the dry mixture to the wet mixture, beating on low speed until just combined.
  7. If using white chocolate chips, gently fold them into the dough.
  8. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  9. Once chilled, scoop rounded tablespoons of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.
  10. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set but still look soft.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  12. If making the optional glaze, whisk together powdered sugar, milk, vanilla extract, and freeze-dried strawberry powder until smooth. Drizzle over the cooled cookies.
