- Fresh strawberries
- Frozen strawberries (optional, thawed and drained)
- 1 ½ cups of all-purpose flour
- 1 cup of granulated sugar
- ½ cup of unsalted butter (softened)
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1 ½ teaspoons of baking powder
- A pinch of salt
- ½ cup of whole milk
- 2 cups of milk (for custard)
- 4 egg yolks
- ½ cup of sugar (for custard)
- 2 tablespoons of cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together ½ cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add in 2 eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together 1 ½ cups of all-purpose flour, 1 ½ teaspoons of baking powder, and a pinch of salt. Gradually add this to your wet mixture, alternating with ½ cup of milk, starting and ending with the flour mixture. Mix until just combined.
- Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once done, let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- In a saucepan, heat 2 cups of milk over medium heat until it’s warm but not boiling. In a bowl, whisk together 4 egg yolks, ½ cup of sugar, and 2 tablespoons of cornstarch until smooth. Gradually add the warm milk to the egg mixture, whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens. Remove from heat and stir in 1 teaspoon of vanilla extract. Allow it to cool.
- Once the cake is completely cool, slice it in half horizontally. Spread a layer of custard on the bottom half, then add a generous layer of sliced strawberries. Place the top half of the cake back on and cover the entire cake with the remaining custard.
- Chill the assembled cake in the refrigerator for at least 2 hours to allow the custard to set. Before serving, garnish with additional fresh strawberries on top.
