Instructions
- Wash the fresh strawberries thoroughly under cold water to remove any dirt or debris.
- Hull the strawberries by removing the green tops and slicing them in half.
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries evenly.
- Let the mixture sit for about 10-15 minutes to allow the strawberries to release their juices.
- Transfer the mixture to a blender or food processor and blend until smooth. For a chunkier texture, pulse a few times instead of blending completely.
- Strain the puree through a fine-mesh sieve into a bowl to remove any seeds or pulp (optional).
- In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
- Microwave the bowl for about 10-15 seconds or until the gelatin is completely dissolved. Avoid overheating.
- Let the gelatin cool slightly before adding it to the strawberry puree.
- In a large mixing bowl, pour in the heavy whipping cream.
- Add the vanilla extract and powdered sugar to the cream.
- Using an electric mixer, beat the cream on medium speed until soft peaks form (about 3-5 minutes). Be careful not to overwhip.
- Take about one-third of the whipped cream and gently fold it into the strawberry puree.
- Add the remaining whipped cream to the strawberry mixture and gently fold until just combined.
- Pour in the dissolved gelatin and fold it into the mousse mixture until fully incorporated.
- Transfer the mousse into serving dishes (individual cups, bowls, or a large serving dish).
- Cover with plastic wrap or lids to prevent odors from the fridge from affecting the mousse.
- Chill in the refrigerator for at least 4 hours, or overnight for best results.
- Once set, remove the mousse from the refrigerator and take off the plastic wrap.
- Serve in individual bowls or plates, garnished with fresh strawberries and mint leaves if desired.
