Instructions

  1. Wash the fresh strawberries thoroughly under cold water to remove any dirt or debris.
  2. Hull the strawberries by removing the green tops and slicing them in half.
  3. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries evenly.
  4. Let the mixture sit for about 10-15 minutes to allow the strawberries to release their juices.
  5. Transfer the mixture to a blender or food processor and blend until smooth. For a chunkier texture, pulse a few times instead of blending completely.
  6. Strain the puree through a fine-mesh sieve into a bowl to remove any seeds or pulp (optional).
  7. In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
  8. Microwave the bowl for about 10-15 seconds or until the gelatin is completely dissolved. Avoid overheating.
  9. Let the gelatin cool slightly before adding it to the strawberry puree.
  10. In a large mixing bowl, pour in the heavy whipping cream.
  11. Add the vanilla extract and powdered sugar to the cream.
  12. Using an electric mixer, beat the cream on medium speed until soft peaks form (about 3-5 minutes). Be careful not to overwhip.
  13. Take about one-third of the whipped cream and gently fold it into the strawberry puree.
  14. Add the remaining whipped cream to the strawberry mixture and gently fold until just combined.
  15. Pour in the dissolved gelatin and fold it into the mousse mixture until fully incorporated.

  17. Cover with plastic wrap or lids to prevent odors from the fridge from affecting the mousse.

  19. Once set, remove the mousse from the refrigerator and take off the plastic wrap.
