Instructions

  1. Wash the russet potatoes thoroughly under cold water to remove any dirt.
  2. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring to a boil over medium-high heat, then reduce to medium and cook for 20-25 minutes until fork-tender.
  4. Drain and let cool for a few minutes.
  5. Peel the warm potatoes using a knife or potato peeler.
  6. Mash the potatoes in a large mixing bowl until smooth.
  7. Add cheese, crumbled bacon (if using), green onions, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  8. In a separate bowl, beat the egg lightly.
  9. Gradually add flour to the egg, mixing until smooth. Adjust consistency with water or milk if needed.
  10. Shape the potato mixture into cakes using about 1/4 cup for each.
  11. Flatten slightly and create an indentation in the center.
  12. Add a small amount of cheese into the indentation, fold edges over, and reshape into a round cake.
  13. Dip each cake into the batter, ensuring full coverage.
  14. Roll in breadcrumbs, pressing gently to adhere.
  15. Place coated cakes on a plate or baking sheet.
  16. Heat 1/4 inch of vegetable oil in a large skillet over medium heat.
  17. Fry a few cakes at a time, about 3-4 minutes on each side until golden brown.
  18. Remove from skillet and place on a paper towel-lined plate to absorb excess oil.
