- 4 slices of your favorite bread (sourdough, whole grain, or white)
- 4 ounces of fresh mozzarella cheese, sliced
- 4 ounces of sharp cheddar cheese, shredded
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1/4 cup fresh basil leaves, chopped
- 4 tablespoons unsalted butter, softened
- Salt and pepper to taste
- Optional: Balsamic glaze for drizzling

- Start by chopping the sun-dried tomatoes into small pieces. For a smoother texture, pulse them in a food processor for a few seconds.
- Rinse the fresh basil leaves under cold water, pat them dry, and chop them finely.
- In a medium bowl, combine the chopped sun-dried tomatoes and basil. Add a pinch of salt and pepper to taste, mixing until well combined.
- Slice your chosen bread evenly to about 1/2 inch thickness.
- Slice the fresh mozzarella into thin rounds. If using a block of cheddar, shred it using a box grater.
- Spread a generous layer of softened butter on one side of each slice of bread.
- On the unbuttered side of two slices, layer the mozzarella followed by a handful of shredded cheddar.
- Spoon a portion of the sun-dried tomato and basil mixture over the cheese, then top with another layer of mozzarella and cheddar.
- Place the other two slices of bread on top, buttered side facing out, and press down gently.
- Heat a non-stick skillet or griddle over medium heat.
- Place the assembled sandwiches in the skillet and cook for about 3-4 minutes on one side until golden brown.
- Carefully flip the sandwiches over. If the cheese isn’t melting, cover the pan with a lid for a minute or two.
- Grill the second side for another 3-4 minutes until golden brown and crispy.
- Ensure the cheese has melted. If not, lower the heat and cook for an additional minute or two.
- Once grilled to perfection, remove the sandwiches from the skillet and let them sit for a minute.
- Cut the sandwiches in half diagonally and serve warm. Drizzle with balsamic glaze if desired.
