Ingredients
- Puff Pastry
- Mixed Berries (raspberries, blueberries, blackberries)
- Granulated Sugar
- Cornstarch
- Vanilla Extract
- Lemon Zest
- Egg
- Water or Milk (for egg wash)
- Optional Toppings (powdered sugar, simple glaze, coarse sugar)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, gently combine your mixed berries, granulated sugar, cornstarch, vanilla extract, and lemon zest. Mix until the berries are well coated and set aside.
- Unroll one sheet of cold puff pastry onto your prepared baking sheet. If it feels too stiff, let it sit at room temperature for a few minutes.
- Spoon the berry filling over one half of the puff pastry sheet, leaving a small border around the edges.
- Fold the other half of the puff pastry over the filling and gently press down around the edges to seal.
- Cut the folded pastry rectangle into approximately 1-inch wide strips.
- Pick up each strip by both ends and gently twist it several times in opposite directions. Place each twisted strip back onto the baking sheet.
- In a small bowl, whisk together the egg with a tablespoon of water or milk to create an egg wash. Lightly brush the tops and sides of each Berrypufftwist with the egg wash.
- Bake for 18-22 minutes, or until the Berrypufftwists are deeply golden brown and puffed up.
- Remove the Berrypufftwists from the oven and transfer them to a wire rack to cool slightly.

Keywords: Keep the pastry cold for best results, avoid overfilling to prevent leaks, and feel free to experiment with different berry combinations. Adding a touch of spice or a cream cheese layer can elevate the flavor.
