Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 large sliced sweet onions, stirring occasionally. Cook for about 20-25 minutes until they’re golden brown and caramelized. If they start to stick, you can add a splash of vegetable broth to deglaze.
- Once the onions are caramelized, stir in 2 tablespoons of honey (or maple syrup) and a pinch of red pepper flakes. Mix well and let them cook for another 2-3 minutes until the mixture is bubbly and fragrant.
- Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the fettuccine.
- Add the drained fettuccine to the skillet with the caramelized onions. Pour in about ½ cup of vegetable broth and toss everything together. If the pasta seems dry, add more reserved pasta water a little at a time until you reach your desired consistency.
- Stir in ½ cup of grated Parmesan cheese until melted and well combined. Taste and adjust seasoning with salt, pepper, or more red pepper flakes if desired.
- Plate the fettuccine and garnish with additional Parmesan cheese and a sprinkle of fresh herbs like parsley or basil for a pop of color.
