- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 2 cups shredded lettuce
- 1 avocado, diced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- Fresh cilantro, chopped
- Lime wedges, for serving
Instructions:
- Cook the rice according to package instructions and set aside.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Add the taco seasoning to the meat along with a splash of water. Stir to combine and let simmer for about 5 minutes.
- In a separate bowl, mix together the black beans and corn.
- To assemble the taco rice bowl, start with a base of rice in each serving bowl.
