Instructions

  • 1 cup uncooked rice (white or brown)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups shredded lettuce
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  3. Add the taco seasoning to the meat along with a splash of water. Stir to combine and let simmer for about 5 minutes.
