  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup carrots, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup sesame seeds (optional, for garnish)
  • 1 head of butter or iceberg lettuce, leaves separated
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Start by gathering all your ingredients. It’s always easier to have everything ready before you begin cooking.
  2. In a large bowl, combine the diced chicken with the teriyaki sauce, soy sauce, rice vinegar, sesame oil, minced ginger, and minced garlic. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 15-30 minutes to enhance the flavors, or skip this step if short on time.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add the marinated chicken to the skillet in a single layer. Cook for about 5-7 minutes without stirring to achieve a nice sear.
  5. Stir the chicken and continue to cook for another 5-7 minutes, or until cooked through and no longer pink in the center (internal temperature should reach 165°F/75°C).
  6. Add the diced bell peppers and shredded carrots to the skillet. Stir and cook for an additional 3-4 minutes until the vegetables are tender but still crisp.
  7. Remove from heat and stir in the chopped green onions.
  8. While the chicken and vegetables are cooking, wash and dry the lettuce leaves carefully.
  9. Take a lettuce leaf and spoon a generous amount of the teriyaki chicken mixture into the center. Avoid overfilling.
  10. Optionally, sprinkle sesame seeds and add fresh cilantro for garnish.
  11. Fold the sides of the lettuce leaf over the filling and roll it up from the bottom to create a wrap.
  12. Serve the lettuce wraps immediately while warm on a platter for everyone to help themselves.
  13. Leftover teriyaki chicken mixture can be stored in an airtight container in the refrigerator for up to 3 days; just reheat when ready to enjoy more wraps.
