  • 1 cup mini marshmallows

  • 1/2 teaspoon vanilla extract (optional)
  • Wooden skewers or toothpicks
  • Cooking spray or parchment paper (for easy cleanup)

Instructions

  1. Wash the strawberries thoroughly under cold water, gently rubbing them to remove any dirt.
  2. Hull the strawberries by removing the green tops and white core using a paring knife or huller. Be careful not to cut too deep.
  3. Pat the strawberries dry with a paper towel to remove excess moisture.
  4. Insert wooden skewers or toothpicks into the base of each strawberry. If using wooden skewers, cut them in half for easier handling.
  5. Preheat your oven to broil.
  6. Line a baking sheet with parchment paper or spray it lightly with cooking spray.
  7. Place the prepared strawberries on the baking sheet, spaced evenly apart.
  8. Carefully place mini marshmallows on top of each strawberry, piling them high if desired. Optionally, sprinkle chocolate chips on top.
  9. Place the baking sheet on the top rack of the oven and broil for 1-2 minutes, watching closely to prevent burning. Rotate the baking sheet halfway through for even toasting.
  10. Once golden brown and puffed, carefully remove the baking sheet from the oven.
  11. If desired, melt coconut oil in a small bowl, stir in vanilla extract, and drizzle over the toasted marshmallow strawberries.
  12. Allow to cool for a minute before serving on a platter.
