- 3–4 ripe bananas
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 tablespoon ground cinnamon
- 1/2 cup light brown sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.
- In a large mixing bowl, mash 3-4 ripe bananas until smooth.
- To the mashed bananas, add 2 large eggs, 1/3 cup of vegetable oil, and 1 teaspoon of vanilla extract. Mix until well combined.
- In another bowl, whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the banana mixture. Stir until just combined; be careful not to overmix.
- In a small bowl, mix together 1/4 cup of granulated sugar and 1 tablespoon of ground cinnamon.
- Pour half of the banana bread batter into the prepared pan. Sprinkle half of the cinnamon sugar mixture over the batter. Pour the remaining batter on top, then sprinkle the rest of the cinnamon sugar mixture over it. Use a knife to gently swirl the mixtures together.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
