- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 ounces softened cream cheese
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract

- 1/2 teaspoon ground cinnamon

Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine 1 cup of graham cracker crumbs, 1/4 cup of melted butter, and 2 tablespoons of sugar. Mix until well combined, then press the mixture into the bottom of a lined muffin tin to form the crust.
- In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth. Gradually add 1/2 cup of granulated sugar and continue mixing until combined. Add 2 teaspoons of vanilla extract, 1 tablespoon of lemon juice, and 2 eggs, mixing well after each addition.
- Mix in 1/2 teaspoon of ground cinnamon and a pinch of nutmeg to give your filling that holiday flavor. Stir until everything is just combined.
- Pour the cheesecake mixture over the prepared crusts, filling each cup about 3/4 full.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the edges are set but the centers still have a slight jiggle.
- Once baked, remove the cheesecakes from the oven and let them cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- After they have cooled, refrigerate the cheesecakes for at least 2 hours, or overnight for best results.
- Once chilled, you can top the cheesecakes with whipped cream, fresh cranberries, or even a drizzle of chocolate for an extra festive touch!
