  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 ounces softened cream cheese

  • 1 tablespoon lemon juice
  • 2 eggs
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine 1 cup of graham cracker crumbs, 1/4 cup of melted butter, and 2 tablespoons of sugar. Mix until well combined, then press the mixture into the bottom of a lined muffin tin to form the crust.
  3. In a large mixing bowl, beat 16 ounces of softened cream cheese until smooth. Gradually add 1/2 cup of granulated sugar and continue mixing until combined. Add 2 teaspoons of vanilla extract, 1 tablespoon of lemon juice, and 2 eggs, mixing well after each addition.
  4. Mix in 1/2 teaspoon of ground cinnamon and a pinch of nutmeg to give your filling that holiday flavor. Stir until everything is just combined.
  5. Pour the cheesecake mixture over the prepared crusts, filling each cup about 3/4 full.
  6. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the edges are set but the centers still have a slight jiggle.
  7. Once baked, remove the cheesecakes from the oven and let them cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.
