Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- Strawberry jam (about 1 teaspoon per cookie)
- Powdered sugar (for optional frosting)
- Milk (or non-dairy alternative, for optional frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper to prevent sticking.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Mix in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- On a lightly floured surface, roll out the chilled dough to about ¼ inch thick. Use a cookie cutter or a knife to cut out rectangular shapes, about 3 inches by 2 inches.
- On half of the cookie shapes, place a small spoonful of strawberry jam (about 1 teaspoon).
- Place another cookie shape on top of the filled ones and gently press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
- Place the cookies on the prepared baking sheets and bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, drizzle with a simple icing made from powdered sugar and a little milk (or a non-dairy alternative) for that classic Pop Tart look.
