  • Yield: 24 cookies 1x

Description

These Strawberry Pop Tart Sugar Cookies capture the nostalgic flavor of a childhood classic in a soft, chewy form. Perfect for any occasion, they are sure to impress family and friends with their delightful strawberry sweetness.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Strawberry jam (about 1 teaspoon per cookie)
  • Powdered sugar (for optional frosting)
  • Milk (or non-dairy alternative, for optional frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper to prevent sticking.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  5. Mix in the egg and vanilla extract until fully incorporated.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  7. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  8. On a lightly floured surface, roll out the chilled dough to about ¼ inch thick. Use a cookie cutter or a knife to cut out rectangular shapes, about 3 inches by 2 inches.
  9. On half of the cookie shapes, place a small spoonful of strawberry jam (about 1 teaspoon).
  10. Place another cookie shape on top of the filled ones and gently press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  11. Place the cookies on the prepared baking sheets and bake for 12-15 minutes, or until the edges are lightly golden.
  12. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  13. Once cooled, drizzle with a simple icing made from powdered sugar and a little milk (or a non-dairy alternative) for that classic Pop Tart look.
