Ingredients

  • Medium to large sweet potatoes
  • Lean ground beef (85-90%)
  • Taco seasoning
  • Canned black beans, rinsed
  • Corn (fresh, frozen, or canned)
  • Salsa (mild to medium chunky)
  • Shredded cheddar cheese
  • Monterey Jack cheese
  • Mexican blend cheese
  • Avocado (optional)
  • Sour cream or Greek yogurt (optional)
  • Fresh cilantro (optional)
  • Lime wedges (optional)
  • Hot sauce (optional)
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub your sweet potatoes clean under running water. Pat them dry. Using a fork, pierce each sweet potato several times all over.
  2. Place the pierced sweet potatoes directly on an oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until they are very tender when squeezed gently.
  3. While the sweet potatoes are baking, heat a large skillet over medium-high heat. Add your ground beef and cook, breaking it up with a spoon, until it's fully browned.
  4. Reduce the heat to medium. Stir in the taco seasoning and about 1/4 cup of water or beef broth into the cooked ground beef. Let it simmer gently for 2-3 minutes.
  5. Stir in the rinsed black beans, corn, and salsa. Continue to simmer for another 5-7 minutes, until the mixture is heated through and slightly thickened.
  6. Once the sweet potatoes are tender, carefully remove them from the oven. Slice each sweet potato lengthwise down the middle and fluff the flesh with a fork.
  7. Add the scooped-out sweet potato flesh directly into the skillet with your ground beef mixture. Gently mash the sweet potato flesh and stir it into the taco filling.
  8. Spoon generous amounts of this savory sweet potato and taco filling mixture back into the hollowed-out sweet potato skins.
  9. Sprinkle the shredded cheese generously over the top of each stuffed sweet potato. Return the stuffed sweet potatoes to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
  10. Carefully remove the Taco Stuffed Sweet Potatoes from the oven. Garnish with your favorite toppings like diced avocado, a dollop of sour cream or Greek yogurt, fresh cilantro, and a squeeze of lime juice.
