Instructions

  1. Start by seasoning the chicken thighs. Pat them dry with paper towels, then sprinkle with salt, black pepper, garlic powder, and onion powder on both sides. This step is crucial for building flavor. Let them sit for about 10 minutes to absorb the seasoning.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is shimmering, add the chicken thighs, skin side down. Sear for 5-7 minutes until the skin is golden brown and crispy. Avoid moving them around too much to get that nice crust.
  3. Flip the chicken thighs and cook for an additional 5 minutes. You want the internal temperature to reach 165°F. Once done, transfer them to a plate and set aside. They’ll continue cooking in the gravy.
