- 1 pound corned beef cut into strips
- 2–3 tbsp butter
- 1 cup Swiss cheese
- Scallions
- 1 cup mayonnaise
- 1/4 cup sugar free ketchup
- 4 tsp horseradish
- 1 tsp hot sauce
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- pinch of pepper
Instructions
- Start by melting 2-3 tablespoons of butter in a large skillet over medium heat. You’ll know it’s ready when the butter is bubbly and foamy.
- Add 1 pound of corned beef cut into strips to the skillet. Sauté covered for 5 minutes, allowing the beef to heat through and get slightly crispy on the edges. Avoid overcrowding the pan to ensure even cooking.
- Now, add one bag of coleslaw mix to the skillet. Cover and cook for another 5 minutes. You’ll see the cabbage wilting and turning tender. Stir occasionally to prevent sticking.
- Once the coleslaw is tender, carefully stir the mixture, ensuring the corned beef and cabbage are well combined. Top with 1 cup of Swiss cheese. You can either cover the skillet to melt the cheese or transfer it to the oven and broil until bubbly, which usually takes about 2-3 minutes. Keep an eye on it to avoid burning!
