This Pink Cadillac Pasta Salad is a vibrant and refreshing dish perfect for summer gatherings. With its creamy dressing and colorful vegetables, it’s sure to be a crowd-pleaser.

Ingredients

Scale
  • 1 pound rotini pasta
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon yellow mustard
  • 1/2 red onion, thinly sliced
  • 2 celery stalks, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Begin by bringing a large pot of salted water to a rolling boil. Add 1 pound of rotini pasta and cook according to package directions, usually about 8-10 minutes, until al dente.
  2. Drain the pasta in a colander and rinse it under cold water for about 30 seconds.
  3. While the pasta cools, take a large mixing bowl and whisk together 1 cup of mayonnaise, 1/2 cup of sour cream, 1 tablespoon of yellow mustard, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  4. Next, chop your vegetables. Thinly slice 1/2 of a red onion, dice 2 celery stalks, and chop 1 green bell pepper. Halve 1 cup of cherry tomatoes. Add all these vibrant veggies to the bowl with the dressing.
  5. Once the pasta is cooled, add it to the mixing bowl and gently toss everything together until the pasta is well-coated with the creamy dressing and veggies are evenly distributed.
  6. Stir in 1 cup of shredded cheddar cheese and 1/2 cup of bacon bits.
  7. Cover the salad with plastic wrap or a lid and refrigerate for at least 1 hour.
  8. Before serving, give the salad a good stir. If it feels too thick, add a touch more mayonnaise or a squeeze of lemon juice.

Keywords: Be cautious not to overcook the pasta; you want it to retain a bit of firmness. For a lighter option, Greek yogurt can substitute sour cream.
