Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Fold in softened cream cheese gently using a spatula.
  7. Gently fold in diced strawberries and white chocolate chips (if using).
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  9. Line a baking sheet with parchment paper.
  10. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.
  11. Bake for 10-12 minutes, or until edges are lightly golden. The centers may look slightly underbaked.
  12. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. Once cooled, dust lightly with powdered sugar.
  14. Enjoy fresh or store in an airtight container at room temperature for up to a week.

Notes

  • Use Fresh Strawberries: For the best flavor, use ripe, fresh strawberries. If using frozen, thaw and drain well.
  • Room Temperature Ingredients: Ensure butter and cream cheese are at room temperature for easier mixing.
  • Don’t Overbake: Cookies should be slightly soft in the center when removed from the oven.
