Description

This delightful recipe combines the heartiness of bell peppers with the satisfying texture of dumplings, creating a unique and filling meal. Ready in under 30 minutes, it’s perfect for busy weeknight dinners.

Ingredients

Scale
  • 4 large bell peppers (any color you prefer, such as red, yellow, green, or orange)
  • 1 package (12-16 oz) Trader Joe’s Frozen Dumplings (your choice of flavor, such as Chicken or Vegetable)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup green onions, finely chopped
  • 1/2 cup frozen peas (optional)
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Aim to create a small cup for the filling. If your peppers don’t stand straight, trim a tiny bit off the bottom to level them out.
  3. In a large mixing bowl, combine the cooked rice, frozen dumplings (no need to thaw), shredded cheese, green onions, and optional peas. Add soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated.
  4. Carefully spoon the mixture into each bell pepper, packing it slightly to fill them generously.
  5. Place the stuffed peppers upright in a baking dish. If you have excess filling, you can place it around the peppers in the dish for extra flavor. Cover the dish with aluminum foil.
  6. Bake in the preheated oven for 25 minutes. You’ll know they’re ready when the peppers are tender and the cheese on top is bubbly and slightly browned.
  7. Remove the foil and bake for an additional 5-10 minutes for a golden brown finish.
  8. Once done, take the peppers out of the oven and let them cool for a few minutes before serving.
