- 4 cups shredded cabbage
- 1 cup shredded carrots
- 2 minced garlic cloves
- 1 tablespoon freshly grated ginger
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- Green onions for garnish
- Rice or cauliflower rice for serving
Instructions
- In a large skillet, heat a tablespoon of sesame oil over medium heat.
- Add 1 pound of ground chicken and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the chicken is cooked through, add 2 minced garlic cloves and 1 tablespoon of freshly grated ginger. Stir for about 30 seconds until fragrant.
- Toss in 4 cups of shredded cabbage and 1 cup of shredded carrots. Stir well to combine and cook for another 3-5 minutes until the cabbage wilts and the carrots are tender.
- Pour in ¼ cup of low-sodium soy sauce and mix everything thoroughly. Allow it to simmer for another 2 minutes so the flavors meld together.
- While the chicken and vegetables are cooking, prepare your rice (or cauliflower rice) according to package instructions.
- To serve, place a scoop of the chicken and cabbage mixture over a bed of rice. Garnish with sliced green onions and a drizzle of sesame oil if desired.
