  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for brushing or spraying
  • Optional Add-ins:
  • 1/4 teaspoon red pepper flakes for a little heat
  • 1 teaspoon Italian seasoning for an herby twist
  • 1 tablespoon chopped fresh parsley for extra freshness

Instructions

  • Prepare the Broccoli
  • Steam or microwave the broccoli until tender.
  • Finely chop it using a knife or pulse it in a food processor for a finer texture.
  • Mix Everything Together
  • In a large bowl, combine the chopped broccoli, shredded cheddar, Parmesan cheese, breadcrumbs, eggs, and seasonings.
  • Mix well until the ingredients are fully combined and can hold their shape when pressed together.
  • Form the Balls
  • Scoop about 1-2 tablespoons of the mixture and roll it into a ball.
  • Place each ball on a parchment-lined baking sheet.
  • Lightly brush or spray with olive oil to help them crisp up.
  • Bake Until Golden & Crispy
  • Preheat your oven to 400°F (200°C).
  • Bake for 20-25 minutes, turning them halfway through for even crispiness.
  • Remove from the oven when they’re golden brown and slightly crispy.
  • Serve & Enjoy!
  • These are best served warm with your favorite dipping sauce. Try them with:
  • Ranch dressing
  • Marinara sauce
  • Garlic aioli
  • Honey mustard

Notes

  • For extra crispy balls, use panko breadcrumbs instead of regular breadcrumbs.
  • Finely chop the broccoli for a smoother, easier-to-roll texture.
  • Don’t overbake! Once golden brown, they’re done.
  • Want more protein? Add cooked, crumbled bacon or finely diced chicken.
  • Make-ahead tip: Form the balls and refrigerate them for up to 24 hours before baking.
