- 2 slices of bread brioche, sourdough, white, or whole wheat
- 1 tablespoon butter softened
- 2 large eggs
- 1 tablespoon milk or cream
- Salt and pepper to taste
- 2 slices cheddar American, or your favorite melty cheese
- 2 slices cooked bacon or 1 cooked sausage patty optional
- Optional add-ins: sliced tomato avocado, spinach, hot sauce
In a small bowl, whisk eggs with milk, salt, and pepper.
Heat a non-stick skillet over medium heat and scramble the eggs until soft and fluffy. Set aside.
Spread butter on one side of each bread slice.
In the same skillet, place one slice of bread butter-side down.
Layer with one slice of cheese, scrambled eggs, bacon or sausage (if using), and the second slice of cheese.
Top with the second bread slice, butter-side up.
Grill for 2–3 minutes per side until golden brown and the cheese is melted.
Let sit for 1 minute before slicing and serving hot.
