Ingredients

  • 2 ¼ teaspoons 1 packet active dry yeast
  • ¼ cup warm water about 110°F / 43°C
  • 1 cup cottage cheese room temperature
  • 2 tablespoons butter softened
  • 1 tablespoon honey or sugar
  • 1 teaspoon salt
  • 1 egg room temperature
  • 2 ¾ cups all-purpose flour or bread flour
  • Optional Add-Ins:
  • 1 tablespoon chopped fresh herbs rosemary, chives, or thyme
  • ¼ cup grated Parmesan or cheddar cheese for extra flavor
  • 1 tablespoon flaxseeds or chia seeds for added nutrition

Instructions

Activate the Yeast

  • In a small bowl, mix warm water and yeast. Let sit for 5-10 minutes until foamy.

Make the Dough

  • In a large mixing bowl, combine cottage cheese, butter, honey (or sugar), salt, and egg. Mix well.
  • Add the yeast mixture and 1 cup of flour. Stir to combine.
  • Gradually add the remaining flour, mixing until a dough forms.

Knead the Dough

  • Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  • (If using a stand mixer, knead with a dough hook for about 5-7 minutes.)

First Rise

  • Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.

Shape & Second Rise

  • Punch down the dough and shape it into a loaf.
  • Place it into a greased loaf pan, cover, and let it rise for another 30-40 minutes.

Bake the Bread

  • Preheat oven to 350°F (175°C).
  • Bake for 30-35 minutes, until the top is golden brown and sounds hollow when tapped.
  • Let cool before slicing.

Notes

  • For extra flavor: Add herbs or shredded cheese.
  • For a sweeter version: Increase the honey or sugar slightly.
  • To make it gluten-free: Use a 1:1 gluten-free flour blend and add 1 teaspoon of xanthan gum.
