Prepare the Chicken:
Season chicken with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium heat.
Sear chicken for 4-5 minutes per side until golden brown. Remove from pan and set aside.
Make the Honey Mustard Sauce:
In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, mayo (or Greek yogurt), apple cider vinegar, paprika, salt, black pepper, and minced garlic.
Cook the Chicken in the Sauce:
Lower the heat to medium-low and pour the sauce into the skillet.
Return the chicken to the pan, spooning sauce over the top.
Cover and cook for 8-10 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serve & Garnish:
Drizzle extra sauce over the chicken.
Sprinkle with fresh parsley and serve with your favorite sides.
