Ingredients

  • For the Chicken:
  • 2 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • For the Honey Mustard Sauce:
  • ¼ cup honey
  • 3 tablespoons Dijon mustard or yellow mustard for a milder flavor
  • 1 tablespoon whole grain mustard optional, for texture
  • 1 tablespoon mayonnaise or Greek yogurt for a lighter version
  • 1 teaspoon apple cider vinegar for a tangy kick
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon minced garlic

Instructions

  • Prepare the Chicken:
  • Season chicken with salt, pepper, and garlic powder.
  • Heat olive oil in a large skillet over medium heat.
  • Sear chicken for 4-5 minutes per side until golden brown. Remove from pan and set aside.
  • Make the Honey Mustard Sauce:
  • In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, mayo (or Greek yogurt), apple cider vinegar, paprika, salt, black pepper, and minced garlic.
  • Cook the Chicken in the Sauce:
  • Lower the heat to medium-low and pour the sauce into the skillet.
  • Return the chicken to the pan, spooning sauce over the top.
  • Cover and cook for 8-10 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Serve & Garnish:
  • Drizzle extra sauce over the chicken.
  • Sprinkle with fresh parsley and serve with your favorite sides.

Notes

  • For extra flavor, let the chicken marinate in the sauce for 30 minutes before cooking.
  • Use boneless thighs for an even juicier result.
  • Add a spicy kick by mixing in a pinch of red pepper flakes or cayenne.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently on the stovetop with a splash of water or broth to keep it moist.
