  • 2 lbs baby potatoes halved or quartered if large
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp whole grain mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • Fresh parsley optional, for garnish

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Make the glaze – In a small bowl, whisk together olive oil, Dijon mustard, honey, whole grain mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.
