- 3 ripe bananas mashed
- ½ cup granulated sugar or brown sugar for more depth
- ⅓ cup vegetable oil or melted butter
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup Nutella plus extra for swirling
Preheat oven to 350°F (175°C). Line a 12-count muffin tin with liners or spray with nonstick cooking spray.
In a large bowl, whisk together mashed bananas, sugar, oil, eggs, and vanilla until smooth.
Add in flour, baking soda, and salt. Stir just until combined — do not overmix.
Divide batter evenly into muffin cups, filling about ¾ full.
Warm Nutella slightly (about 10–15 seconds in the microwave), then add 1–2 teaspoons on top of each muffin.
Use a toothpick or knife to gently swirl the Nutella into the batter.
Bake for 18–22 minutes, or until a toothpick comes out clean with a few moist crumbs.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
