  • 4 large flour tortillas 10–12 inch
  • cups cooked shredded chicken rotisserie or leftover
  • 1 cup cooked rice white, brown, or Spanish
  • ¾ cup refried beans canned or homemade
  • 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • ½ cup salsa or pico de gallo
  • ½ cup shredded lettuce
  • ¼ cup sour cream or guacamole or both
  • Optional: jalapeños chopped tomatoes, hot sauce, cilantro

Instructions

  • Warm the tortillas: Heat each tortilla for 10–15 seconds in the microwave or a dry skillet to make rolling easier.
  • Layer your fillings: Down the center of each tortilla, layer refried beans, rice, chicken, cheese, salsa, lettuce, and sour cream or guacamole.
  • Roll it up: Fold in the sides, then roll up tightly from the bottom.
  • Toast (optional but delicious): Place seam-side down in a skillet over medium heat. Toast for 1–2 minutes per side, until golden and warm.
