- 4 large flour tortillas 10–12 inch
- 1½ cups cooked shredded chicken rotisserie or leftover
- 1 cup cooked rice white, brown, or Spanish
- ¾ cup refried beans canned or homemade
- 1 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
- ½ cup salsa or pico de gallo
- ½ cup shredded lettuce
- ¼ cup sour cream or guacamole or both
- Optional: jalapeños chopped tomatoes, hot sauce, cilantro
Warm the tortillas: Heat each tortilla for 10–15 seconds in the microwave or a dry skillet to make rolling easier.
Layer your fillings: Down the center of each tortilla, layer refried beans, rice, chicken, cheese, salsa, lettuce, and sour cream or guacamole.
Roll it up: Fold in the sides, then roll up tightly from the bottom.
Toast (optional but delicious): Place seam-side down in a skillet over medium heat. Toast for 1–2 minutes per side, until golden and warm.
Serve and enjoy: Slice in half and dig in, or wrap for later if meal prepping!
