Smoked Salmon Mini Quesadillas
- 4 small flour tortillas
- 100 g smoked salmon
- 1/2 cup cream cheese
- 1 tbsp fresh dill chopped
- 1/2 red onion thinly sliced
- 1/4 cup shredded cheddar cheese
- 1 tbsp butter for cooking
Step 1: Spread the Cream CheeseSpread a generous layer of cream cheese on one side of each tortilla. This will serve as the creamy base that brings all the flavors together.Step 2: Add the Smoked Salmon, Dill, and OnionPlace a few slices of smoked salmon on top of the cream cheese. You want to load them up with a good amount of salmon! Then, sprinkle fresh dill over the top for a burst of flavor, and add the thinly sliced red onion for a crunchy contrast.Step 3: Top with CheddarSprinkle a little shredded cheddar on top of the salmon and dill. As the quesadillas cook, the cheddar will melt, adding richness and depth to the flavors.Step 4: Fold and CookFold each tortilla in half to cover the filling. Heat a tablespoon of butter in a non-stick pan over medium heat. Once the butter has melted, carefully place the folded tortillas in the pan. Cook for 2-3 minutes on each side until golden brown and crispy.Step 5: Slice and ServeOnce they’re crispy and golden, use a sharp knife to slice each quesadilla into small wedges.
